The invention discloses an illumination control system, method and device. The illumination control method includes: obtaining environmental information in a controlled area which is an area where an illumination lamp is; receiving a touch controls signal in an environment corresponding to the environmental information, wherein the touch control signal is a signal used for controlling optical parameters of illumination which are optical parameters of the illumination lamp; recording a mapping relation between the environmental information and the optical parameters of illumination according to the touch control signal; and controlling the illumination lamp according to the mapping relation. The illumination control method provided by the invention solves the technical problem that an illumination control method in the prior art cannot learn dimming habits of a user according to environmental information and control an illumination lamp according to the dimming habits.
