In this study, we design a kind of electronic nose, which contains a MQ-3-type gas sensor, five TGS series gas sensors and a collection circuit with the LPC2138 microprocessor as the core. The collected data are uploaded to a computer through the USB, real-time displayed by using host computer LabVIEW software, and analyzed using principal component analysis (PCA) and linear discriminant analysis (LDA). This designed electronic nose has been used to measure five kinds of vinegar, vinegar types, and ingredients relation of which were analyzed. The results show that electronic nose technology is potential in vinegar quality pre-evalution.
