Safety assessment of food derived from genetically modified crops

Abstract Genetically modified foods are an essential requirement for the food demand of our ever-increasing population. Various approaches are available for assessing the safety of GM foods including the use of bioinformatics, examining the stability of a protein in the gastrointestinal tract, and allergenicity testing using animal models. This chapter explores the safety-related concerns about GM foods.
