호텔 식자재 구매관리의 효율화 방안을 위한 실증분석

This study aims to investigate the influence of hotel employees’ foodstuff management on the satisfaction of general goods purchasing and analyse the influence of employees’ awareness on the coordination of affairs between departments and job satisfaction of the employees. To find out the employees’ awareness of their purchasing affairs and satisfaction with their jobs, employees working at cooking and purchasing departments of ten special class hotels in Seoul had been surveyed for 15 days from Mar. 10 to 25, 2003 by a questionnaire that asked total 72 questions Among the distributed 367 copies of the questionnaire, 357 copies were collected, showing 97.3% of collection.
