SYNOPSIS In this paper an empirical relation has been obtained for convective and evaporative heat transfer coefficients in the drying of jaggery (concentrated sugar-cane juice) as a function of time and temperature under natural and forced modes. Empirical relations have been validated by regression analysis. The correlation coefficients, mean bias error and root mean square error have been obtained. It is clear that the result obtained by developing empirical relations is very close to the evaluated results for a clear day.
