Fructooligosaccharides—Occurrence, preparation, and application

Abstract Fructooligosaccharides from sucrose, new alternative sweeteners, possess a number of desirable characteristics such as low calories, no cariogenicity, safety for diabetics, and bifidus-stimulating functionality. The aim of this article is to review the new fructooligosaccharide sweeteners established on the market in terms of their enzymatic preparation and characteristics, functionalities and applications, and status in the sugar market.
