Summary This work aimed to evaluate the acceptability of diet pastes prepared with yacon tubers and three concentrations of passion fruit juice (PFJ): 15 (T1), 30 (T2) and 40% (T3). The product prepared with 30% of PFJ was characterized physicochemically and presented 78% of sensory acceptance, besides receiving scores above ‘slightly liked’ for color, acceptance, appearance and taste. Notwithstanding, its physicochemical and chromatic parameters were monitored for 35 days under refrigeration at 7 °C, showing no statistical difference (p > 0.05) during this period of cold storage. This sample presented a high moisture content (73.18%) and water activity (a w = 0.900), and low contents of lipids (1.28%), proteins (5.85%) and total sugars (17.31%), and could be considered a source
