PART OF THE YEAST SURFACE APPARENTLY INVOLVED IN FLOCCULATION

Papain is shown to destroy the flocculence of isolated yeast cell walls, the main soluble product of the action being a mannan-protein complex. A direct role for the latter in flocculation is postulated.
