FIELD: food industry. SUBSTANCE: invention relates to processing of fish industry wastes (fish skin) and refers to a method for production of an acetic dispersion of high molecular fish collagen. The method for production of an acetic dispersion of fish collagen involves fish skin clearing, milling, threefold washing with tap water, collagen-containing raw material treatment with 3%-acetic acid solution at the water-to-goods ratio equal to 5, maintenance in acid solution under periodic stirring conditions, homogenisation by way of filtration through Capron fabric. The cleaned and milled collagen raw material is preliminarily analysed for content of moisture, ash and fat. Maintenance in acid solution is performed during 15-18 hours; fish skin used has moisture content equal to 58-69%, ash content equal to 0.6-0.9% and fat content equal to 1-10%. EFFECT: proposed method for production of an acetic dispersion of fish collagen ensures obtainment of high molecular fish collagen with the preset complex of properties as follows: molecular weight - 210-220 kDa; polydispersity - 1,2-1,5; fat content - 0,03-0,05%; ash content - 0,03-0,04%; increase of collagen yield is provided for as well as the technological cycle duration reduction and electric energy expenditure decrease; the obtained product may be used for manufacture of medicinal and cosmetic preparations as well as some food products. 3 cl, 1 dwg, 3 ex
