METODOLOGI PENELITIAN

Pineapple is the third largest fruit production in Indonesia based on Fixed Figures (ATAP) in 2015 pineapple production reached 1.73 million tons. From the consumption and processing of pineapple, a large amount of waste is produced in the form of pineapple skin and weevil, which is 48.6% of the fruit weight. Pineapple contains an active ingredient, namely the enzyme bromelain. The highest concentration was found in the weft of the pineapple compared to the flesh, skin and crown of the fruit. Bromelain enzyme is very beneficial for human health. In this research of making instant powder from pineapple weevil, the author will compare two methods of working, namely the dry method and the wet method. The dry method of pineapple hump is directly dried in the sun for 5 days, then the size is reduced to form a powder, while the wet method of pineapple hump is first extracted using water to get the juice, then heated to form instant powder. To see which method of working quality is better, it will be assessed based on the quality requirements of the Indonesian National Standard number 01-4320-1996. The tests carried out included testing for water content, ash content, insoluble content, soluble time, yield, total plate number, coliform and organoleptic tests. The best method for making instant powder of pineapple weevil waste based on testing water content, insoluble content, soluble time, and Total Plate Number is the wet method. Meanwhile, for organoleptic testing and yield, the best method is the dry method. Then for testing the ash content and coliform the value of both methods is the same.
