Comparison of visual appearance and texture profiles of jellies in France and Vietnam and validation of attribute transfer between the two countries

Abstract This study aimed at comparing visual appearance and texture profiles of jellies in France and Vietnam and at assessing the possibility of attribute transfer between the two countries. In France and in Vietnam, two panels independently generated, defined and used their own attributes to characterize the product set. In a second step, French and Vietnamese attributes were translated and transferred to two new panels respectively in Vietnam and in France. At a very global level of the analysis, the examination of the RV and NRV coefficients revealed important similarity between the two sensory profiles independently established in France and Vietnam. It also revealed that it was possible to translate and transfer attributes between the two countries with an important accuracy. At a finer level of the analysis, examining the data with Hierarchical Multiple Factor Analysis (HMFA) and taking the hierarchical structure of the data into account made it possible to reveal interesting features. First, for the panels using French attributes product scaling was more balanced between the first two axes whereas for panels using Vietnamese attributes, product scaling was more dominated by the opposition of the products on the first axis. Second, attribute transfer appeared to be slightly more efficient from France to Vietnam than from Vietnam to France. The latter point was discussed with regard to panels’ performances.
