Electronic nose and the development of its application to classify of dairy products

The principle and constitutes of electronic nose were given in this paper. The current trends in the development of sensor techniques and pattern recognition were described from the point of view of an e-nose system. Special references to applications to dairy products, such as the milk with different shelf-lives and cheese with different geographic origin, detection bacteria and process control and monitor,were summarized then. The problems of electronic nose applied in diary products were discussed lastly.
