Des industriels face à la collecte de lait en Afrique de l'Ouest : pratiques et stratégies

Can dairy industrialization offer a virtuous circle between livestock development and feeding urban populations in West Africa ? Based on two cases of dairy industry, first in Senegal and second in Mali, this study intends to analyse the strategies involved in crude milk collection. Finally, these two topics, with a Fulani dairy and a milk powder industrial user, are not so opposite as it seems, considered their commercial and supply’s strategies. The future of the dairy industry is undoubtedly a mixed model assumed using powder and fresh milk for a segmented market. If industrialization full local milk sector appears always impossible, local milk seems well to be imposed in the circuit Mots-cles : Industrie laitiere, Afrique de l’Ouest, collecte, lait en poudre, fluidite.
