Characterization of endosperm starch from high-amylose mutants of rice (Oryza sativa L.)

The structure and properties of endosperm starch from high-amylose mutants of rice were examined. The starch in the mutants was characterized by a higher content of amylose and loosely branched amylopectin with longer chains compared with non-mutant starch. The starch granules in the mutants showed high temperatures of gelatinization and a type B pattern in X-ray diffractometry. These properties were similar to those of amylose-extender (ae) starch of maize. The effect of locations where rice plants were grown on the endosperm starches of one high-amylose mutant and a non-mutant was also investigated. Charakterisierung der Endospermstarke amylosereicher Mutanten von Reis (Oryza sativa L.). Struktur und Eigenschaften der Endospermstarke von amylosereichen Reismutanten wurden untersucht. Die Starke der Mutanten war durch einen hoheren Gehalt an Amylose und weniger stark verzweigtes Amylopektin mit langeren Ketten im Vergleich zu nicht mutanter Starke charakterisiert. Die Starkekorner in den Mutanten zeigten hohe Verkleisterungstemperaturen und gehorten bezuglich ihrer Rontgenbeugung zum B-Typ. Diese Eigenschaften waren denjenigen von Amylose-Extender (ae)-Starke von Mais ahnlich. Der Einflus des Anbauortes der Reispflanzen auf die Endospermstarken einer amylosereichen Mutante und einer nicht mutanten Sorte wurde ebenfalls untersucht.
