This scientific monograph discusses the analysis of cereal products and the processing methods of cereal products or parts of cereal products, for the acquisition of such end products as gluten products, fatty products, hydrolysis products or alcoholic beverages. The aim of this book is to broaden the use of cereals, not by giving ready-made recipes but by suggesting and opening up new possible ways of converting and utilizing cereals and components of cereals. The text includes a section which discusses the economics of investing in certain cereal-processing techniques. It is aimed at students as well as people active in the cereals processing industry.
