In‐Vitro Protein Digestibility of Dehydrated Protein Extract from Poultry Bone Residue

In-vitro protein digestibility of freeze- or spray-dried protein obtained from poultry bone residue by alkali extraction was evaluated by a multienzyme procedure. Digestibility of the dehydrated extracts was significantly lower than chicken breast muscle or mechanically de-boned poultry. Digestibility of the spray-dried extracts was about 3% higher than freeze-dried extracts.
