Abstract: One of the new trends in the world of foods is to satisfy the customer’s expectations of having nutritious, fresh or fresh-like foods. Modified atmosphere packaging (MAP) can be regarded a revolutionary step that enables retailers to market fresh foods with extended shelf-life without any major processing, preservatives or chemical additives. This chapter discusses principles and key factors affecting MAP, regulatory and marketing issues, and innovations and novel trends in the application of MAP in fresh produce.
