Enzymic processing of marine raw materials

Abstract The literature on processing and modification of marine raw materials by enzyme technology is reviewed. The intention has been to survey all processes developed, and particularly industrialised processes, where marine raw materials including fish, shellfish, or algae are treated with enzymes. The utilisation of endogenous enzymes in autolytic processes is briefly discussed, but the major goal has been to survey methods where enzymes are added to the raw materials. At present, preparation of fish protein hydrolysates is the most important commercial process, but enzymic methods for accelerated fish ripening and selective tissue degradation are being recognised as interesting alternatives to conventional processing.
