The Headspace Volatiles of the Asian Truffle Tuber indicum Cooke et Mass

Abstract The main headspace volatiles of Tuber indicum (characterized by DNA analysis) were determined by headspace analysis using GC/MS. The major component was found to be 3-methylbutanol. Unlike other tubers, no sulfur compound was found, and the volatiles composition poorly changes on storage.
