Somatske stanice i njihov utjecaj na kakvoću i preradu mlijeka

Broj somatskih stanica u mlijeku je međunarodno priznati parametar za ocjenu zdravstvenog stanja vimena. Iako u Hrvatskoj još nije prihvaćen novi prijedlog plaćanja mlijeka na osnovu broja somatskih stanica, u zemljama EU, mlijeko od 1. siječnja 1995. ne smije sadržavati više od 400.000 somatskih stanica/ml. Bakterijska infekcija mliječne žlijezde (klinička ili subklinička) predstavlja glavni izvor povećanja somatskih stanica u mlijeku. S povećanjem broja somatskih stanica iznad 400.000/ml, mlijeko je mastitično a posljedice se manifestiraju u smanjenoj sekreciji mlijeka, promjeni kemijskog sastava i fizikalnih, bakterioloških i tehnoloških osobina mlijeka. Kakvoća mlijeka iz bolesne četvrti vimena, ne može se nikakvim postupkom poboljšati, pa je i to jedan od razloga zbog čega se dijagnosti­ ciranje, kontrola i suzbijanje mastitisa mora redovito provoditi. Određivanje broja somatskih stanica u kravljem mlijeku preporuča se kao jedan od obaveznih parametara u procjeni kakvoće mlijeka.
