Abstract Biosensors enable specific analytical opportunities compared to the currently used devices for food allergens detection and intelligent packaging. This chapter summarizes the latest advances of biosensors and the trends in their development with regard to food allergens and intelligent packaging. While the focus is on commercial biosensors, for which the innovative elements, figures of merit, and applications reported for far are detailed, some analytical devices in early development stage are briefly presented as well. The limiting factors for the emergence of biosensors are discussed in the context of a commercial landscape dominated by chemical and physical sensors and indicators for intelligent packaging and by the standard immunoassay and DNA-based allergen detection kits, respectively. Increased impact of biosensor-based devices on people's life and notable contributions of these analytical tools to food safety are anticipated.
