Dietary manipulation of the content and fatty acid composition of milk fat

The fat content of bovine milk shows considerable seasonal variation. For example, values ranging from 35.6 to 41.2 g/1 were recorded in manufacturing dairies in South-west Scotland (Muir et al. 1978), the samples being taken from silos containing up to 20 ooo 1 of milk. With individual cows, much more extreme values may be observed, e.g. 20-60 g/l, depending on breed, age, stage of lactation, nutritional status and state of health.
