Identification and lipase-producing abilities of moulds isolated from ivorian raw cocoa beans

A total of 1 00 samples of cocoa b eans characterized by high Free Fatty Acids content were collected and analysed for n umeration, i dentification and lipase-producing abilities of f ilamentous fun gi. Analysis revealed the occurrence of Absidia corymbifera, Rhizopus oryzea and Penicilium chrysogenum from over 8 0% of t he samples. Aspergillus tubingensis, A. f lavus a nd A. t amarii were isolated from 40-50% of the samples. The predominant moulds were R. oryzea and A. corymbifera. R. oryzea grew abundantly on C zapeck-dox a gar en riched with o il substrates and had greatest l ipase-producing abilities. FFA accumulation in raw cocoa beans could be attributed mainly to the pr esence and t he action of R. oryzae and A. corymbifera.
