Artificial neural network combined with traditional orthogonal design constitute the basis on which a new method of test data analyzing and processing was put forward. with the help of artificial neural network, through emulation, evaluation and optimization, the optimal conditions for saccharification and fermentation of monascus waxberry wine was ascertained. A newtype waxberry wine with mellow taste, unique flavor and abundant nutrition was thus obtained. The technology adopted is reasonable and practicable and was so far shown to be satisfactory.
