Red Betel leaves (Piper Crocatum) is one of natural ingredients that have the ability as an antimicrobial, because contents for 4.2% essential oil consisting mostly of betephenol which is isomer Euganol allypyrocatechine, Cineol methil euganol, Caryophyllen (siskuiterpen), kavikol, kavibekol, estragol dan terpinen. The extraction of piper crocatum can be create with Microwave Assisted Extraction (MAE). The purpose of this research was to determine the effect of concentration and immersion time the piper crocatum essential oil for colour, aroma, texture, pH, water contents and total microbial of stolephorus indicus The difference of concentration piper crocatum essential oil gives very real as the effect and immersion time also gives a very real effect on pH, moisture contents, colour and aroma for stolephorus indicus, but no significant effect on total bacterial and texture stolephorus indicus. The best results were obtained of concentration 1.0% and immersion time 10 minute, with score of colour 2.75, aroma 2.75,texture 2.4, pH 7.3, water contents 52,20% and total microbial 3,8x106 CFU/g.
