Effects of different cultivars and particle sizes of non‐degermed millet flour fractions on the physical and texture properties of Chinese steamed bread

Foxtail millet (Setaria italica L. Beauv), also known as millet, is one of the first domesticated specialty crops that originated in China and has been cultivated throughout Chinese civilization. After removing the outer shell, the millet can be boiled for routine consumption. It is rich in various nutrients, including protein, fat, vitamins, mineral elements, and dietary fiber (Zhu & Chan, 2018).
