Progress on food-borne microbiological risk assessment

Food-borne pathogens are of immediate and serious concern to food safety and human health. Risk Assessment is a key method used to establish standards,guidelines and other recommendations for food safety. Risk assessment on food-borne pathogens not only protect food safety and human health,but also enhance consumer protection and facilitate international trade. Conceptions,classification and contents on microbiological risk assessment were introduced in this paper. Progress in research of risk assessment on food-borne pathogens at home and abroad was summarized. Main problems in microbiological risk assessment in China at present were pointed out and advices were given on quantitative microbiological risk assessment.
