Production of cassava in Madura was huge enough. However it was lack of good practicing of cassava technology process. Aim of this project used to investigate the best quality MOCAF among 4 selected. The research was carried out using nested experiment with 2 factors. Plantation site (Bangkalan, Sampang, Pamekasan and Sumenep) as the first factor and cassava varieties as the second factor. There was 8 combined experimental group with three repetitions. The result was statistical analyzed using ANOVA (Analysis of Variance) and LSD (Least Significant Difference) test α 5% for company sites and T-test for company variety. The best treatment was determined using de garmo effective index method. Result showed planting sites significantly affect the increase starch content and ash content, while the varieties did not significantly affect water levels drop, increased levels of protein, fat, ash content and the level of brightness.
