Developments in sampling and test methods for pathogens in fresh meat

Abstract: Current EU and US regulatory authorities’ requirements for testing of raw meats for Salmonella, verotoxigenic Escherichia coli (VTEC) and Campylobacter are described, including batch acceptance testing and testing for compliance with process performance standards. Sampling plans for both types of testing, in the form of two-class attribute acceptance plans, are examined; and the performances of the tests with respect to their limits of detection, and their potentials for giving false positive or false negative results, are considered. The efficacy of pathogen testing for ensuring product safety is discussed.
