Modelling the response of apples to loads

A modelling method, using imaging techniques, is proposed for the study of impact and compression damage to apple flesh. It is based on the influence of maximum cell stress before collapsing and cell spatial distribution on the mechanical properties of the whole tissue. Good agreement was found between simulation results and previous experimental data, which confirm that two different physical phenomena can occur, depending on strain rate. Although bruise volumes during compression and impact, in most cases, vary together when compactness and cell breaking stress level change, it can happen that damage increases during compressive tests, when no change is noticed during impact tests.
