Studies on the Production and Optimal Drying Condition of Curcuma longa L.

Abstract - We investigated the optimal cultivation system and dry processing method of rhizomes from Curcuma longa L. in Suncheon, the southern area of Korea. The expe rimental results are summarized as followings. Curcma longa rhizomes were transplanted on Apr. 30th, May 10th, and May 20th. The pl ant height, stem diameter, number of leaves and yield were highest in transplanted on May 10th. The fresh rhizome weight of Curcma longa was the heaviest in November 20 and the optimal dry temperature was 40 ℃. In sensory evaluations, there were significant differences among the Curcuma longa pills in terms of flavor, color, color and texture and overall accep tability, and honey added groups received significantly higher scores than the other groups. Key words - Curcuma longa L., Optimal transplanting time, Rhizome weight, Sensory evaluation, Curcuma longa pills * 교신저자(E-mail): skchoi@sunchon.ac.kr ⓒ 본 학회지의 저작권은 (사)한국자원식물학회지에 있으며, 이의 무단전재나 복제를 금합니다. 서 언 울금(Curcuma longa Linne)은 생강과(Zingiberaceae)의 다년생 초본으로 원산지는 인도로 알려져 있으며 우리나라를 비롯한 일본, 대만, 인도네시아 등 에서 재배되고 있다(Ahn, 2000). 울금은 강황(Curcuma longa L.)의 덩이뿌리(塊根) 주피를 제거하고 쪄서 말린 것을 기원으로 하며 , 강황은 뿌리줄기(根莖)를 기원으로 한다고 규정했으나(KFDA, 2003). 대한약전 9개정(KFDA, 2007) 에는 온울금(溫鬱金, Curcuma wenyujin Y.H Chen et C. Ling), 강황(薑黃, Curcuma longa L.), 광서아출(廣西我朮, Curcuma kwangsiensis S. G. Lee et C. F. Liang) 또는 봉아출(蓬我朮, Curcuma phaeocaulis Val.)을 기원 식물로 추가하였고 대한약전외 생약(한약) 규격집(KFDA, 2005)에 수재된 강황은 삭제하였다.울금의 효능은 담즙분비촉진, 방향성 건위, 이뇨, 해열 작용이 있으며 간장염, 황달, 담석증, 담도염, 급만성 담낭염, 급성간염의 치료제로 사용될 뿐만 아니라 스트레스로 인한 흉통, 월경불순, 생리통 등에 사용된다(Kim, 1984; Kim et al., 2005).울금의 주요성분은 curcuminoids 15%, 노란색소 1~3%, 정유성분 1~5%, 녹말 30~40%, 약간의 지방이 함유 되어있다(Kang, 2007). 노란 색소는 curcumin이 주성분이며 tumerone은 울금의 특이한 냄새를 갖게 하는 정유 성분으로 α-, γ-tumerone으로 쉽게 바꿔진다(Jung et al., 2004; Kim et al., 2005). 울금의 생리활성에 관한 연구를 보면 항암 (Kuttan et al., 1985), 항돌연변이(Palasa et al., 1992), 항염증(Kumara et al., 2006), 항균성 작용(Choi, 2009) 및 울금의 주요성분 중 하나인 curcumin의 항산화작용이 확인되었다 (Masuda et al., 2001). 또한 울금의 건조 전후 생리활성과 성분 변화에 관한 연구가 보고된바 있다(Singh et al., 2010).
