Water sorption isotherms of soybean varieties grown in Argentina

Summary Water adsorption isotherms at 25°C of five soybean varieties grown in Argentina were determined; oil contents ranged from 16.7 to 22.7% (dry basis). Equilibrium moisture curves of the different varieties were coincident when the moisture contents were calculated on an oil-free basis. Water adsorption by soybean oil was negligible compared with the water adsorbed by the non-oil fraction at the same relative humidities. The adsorption isotherms of all varieties is well described by a single adsorption equation.
