Some aspects of the drying of protein products

A review of methods for evaluation of the quality of protein-containing products is presented. Selected methods of drying which allow high product quality to be preserved are discussed. The degradation kinetics of labile materials were approximated by a first-order differential equation and determined experimentally for a number of products. The paper also analyses the drying of labile products at reduced inlet humidity of drying agent. The results are sufficiently encouraging for further development of this drying technique. The paper presents an application of a method developed earlier for calculation of water sorption isotherms for a multicomponent mixture. This approach was directly applied in a mathematical model of fluidized bed drying of biosynthesis products to determine their degradation kinetics. A comparison between experimental and predicted values is presented.
