Instrumental assessment of the sensory quality of fruits and vegetables

Abstract: Increasing demands for improved quality of fruit and vegetables in the fresh-produce market and the food industry, as well as growers’ expectations of high prices for premium quality produce drive the demand for fast, accurate, and objective methods for measuring and monitoring product quality. Such methods are required throughout the chain of preharvest and postharvest processes, from the field to the consumer. Several technologies are available for correlating specific quality-related indices and characteristics of fruits and vegetables with the stages of development during growth and maturation, and during the course of storage and shelf-life, through to consumption. This chapter will summarize the studies, adaptation, modification, and innovation of technologies and devices for determining the material properties of fresh fruits and vegetables as they pass along the processing chain from the field to the consumer. Included are descriptions of the various methods, measurements, equipment, principles and procedures for data processing and correlating the measurements with quality indices of fruits and vegetables as they pass through the various agricultural processes.
