THE EBC‐NINHYDRIN METHOD FOR DETERMINATION OF FREE ALPHA AMINO NITROGEN

A ninhydrin method is recommended as the EBC Standard Method for the determination of free alpha-amino nitrogen (FAN) in malts, worts and beers. The method, which is described in detail, has been tested in several trials and found to yield highly reproducible results, within and between the participating laboratories. The correlation is reported between the recommended ninhydrin method and a method using tri-nitro-benzene-sulphonic acid.
