Modelling and dynamic analysis of a continuous whipping system

In order to clarify the mechanism of the cycling phenomenon in a continuous whipping system, the dynamic model has been developed. The model involves the kinetics of whipping in the dasher and the flow characteristics of whipped cream in the discharge pipe which is connected with the dasher. The whipping rate has been expressed by an autocatalytic-type equation in terms of whipping index defined here using the firmness of whipped cream. Numerical simulations based on the proposed model lead to the conclusion that the cycling phenomenon is caused by the interaction between the whipping rate in the dasher and the flow characteristics of whipped cream in the discharge pipe, because both are dependent on pressure
