The invention provides a flexible sun tracking method in a solar collecting device, which comprises that: a sun azimuth monitoring module monitors the sun azimuth in real time and transmits sun azimuth and height angle parameters to a parameter calculating module; the parameter calculating module calculates the parameters, and converts the parameters to acquire two driving rotation angle parameters corresponding to the sun azimuth and the height angle; a driving device drives a solar collecting plate to perform real-time linkage on two angle azimuths according to the change of the sun azimuth and height angle parameters; a self azimuth error measuring module monitors the azimuth error of the solar collecting plate in real time and transmits the parameters; and a feedback control module corrects the frequency and stride of the real-time linkage according to the azimuth error of the solar collecting plate. The invention also provides a system adopting the method. The method and the system determine the sun azimuth as azimuth and height angle parameters, convert the two angle parameters and drive the solar collecting plate to link the two angle parameters, so the sun tracking precision is high, the time interval is short, the structure is simple and the manufacturing cost is low.
