Dehydrogenase-based thick-film biosensors for lactate and malate

Abstract Multichannel amperometric thick-film biosensors for lactate and malate are described. Lactate dehydrogenase and malate dehydrogenase are used as enzymes for the sensing process. They are immobilized by entrapment in solvent-free aqueous polymer dispersions that allow automated fabrication of the enzyme membranes. The influence of pH and of the co-substrate concentration on the sensor characteristics is shown. Results obtained by electrochemical lactate measurements in dairy products are compared to photometric results and a strong degree of correlation is observed.
