Dielectric Properties of Rice at Frequencies from 50 HZ to 12 GHZ

ABSTRACT The dielectric properties of rough, brown and white rice of a long-grain cultivar and two medium-grain cultivars were measured over moisture contents ranging from 11% to 21% for rough rice and to 16% for brown and white rice at frequencies ranging from 50 Hz to 12 GHz at 24°C. Data are presented on the frequency and moisture dependence of the dielectric constant and loss factor of the different cultivars and kinds of rice. The influence of the bulk density of the rice on the dielectric constant is presented; and it is shown that variations in dielectric constant attributable to bulk density variation can be reduced when data are presented in terms of moisture density (decimal moisture content x bulk density).
