Smart polymers for the food industry

Molecular imprinting is an emerging technique for the introduction of recognition properties into synthetic polymers using suitable templates. Food industry applications of materials prepared by this technique include the selective removal of undesirable components, separations and analyses. Examples of each of these processes are presented along with a brief description of how imprinted polymers are made.
