ELABORATION AND IMPLEMENTATION OF STANDARD OPERATING PROCEDURES IN THE DAIRY INDUSTRY

The demand of costumers and market increases the demand for systems that can provide food with quality and that are effective in the categories reduction of loss and increasing competitiveness, apart from health questions. Aiming at this quality, industries use tools such as Good Manufacturing Practices (GMP) and Standard Operating Procedures (SOPs). This work, which is developed through a project called University with no Boundaries, has as one of its goals the development and implementation of standard operating procedures on a small dairy in the region of Marialva. To the development of the Standard Operating Procedures (SOPs) there were some visits to the factory in order to analyze the reality of the place. Employees received training in Good Manufacturing Pratices (GMP) and, gradually, the term SOP was being introduced. It was prepared ten standard operating procedures (SOPs) for this small dairy. It was noted that staff had no previous knowledge about the standard operating procedures, but after training they understood the importance of their implantation and segment. The training and commitment of everyone involved in the manufacture of the products were basic conditions for the successful implementation of this tool.
