The digested behavior of yak (Poephagus grunniens L.) butter microcapsule: influence of pancreatin concentration

In this research, microcapsule with different amount of yak butter (YB) was prepared by spray drying method. The in vitro digested behavior of the microcapsules as affected by pancreatic enzyme concentration in a pancreatin/bile salts-induced intestinal model was then investigated in terms of YB release, particle size distribution, zeta potential and microstructure. The results suggested that pancreatic enzyme concentration had significant impacts on the digestion behavior of microcapsules, especially for the low YB added samples. The hydrolysis of pancreatin, together with emulsification of bile salt and its positive effect for pancreatin hydrolysis all occurred during the incubation and affected the digested behavior in the end. This research would provide valuable information for designing and digestion of YB microcapsule.
