Application of Hurdle Technology in Preservation of Apple Preserves

Based on the research and application of hurdle technology,the apple preserves' processing and preservation were controlled scientifically by five hurdle factors——temperature,pH,A_w,Preservative and package,and the best hurdle conditions were determined.Orthogonal experimental results showed that:when A_w was 0.65,blast drying temperature was 75℃,pH was 3.5,added 0.2g·kg~(-1) sodium benzoate and used by vacuum-packed,the apple preserves could be preserved in the normal temperature for 90 days and kept good quality except for a tiny browning in color
