Microbiological performance objectives and criteria.

Publisher Summary An increase in the number of incidents related to food safety in recent years has led to nothing less than a paradigm shift in the way that food safety is managed. Regulatory efforts internationally have been focused on the use of risk assessment tools to drive food policy and standards away from prescriptive to outcome-based control measures. The application of these approaches is probably more advanced in the regulation of meat safety than any other food commodity. This chapter describes the developments in risk management internationally and how they may be related to the development of microbiological performance objectives and criteria for fresh red meat.
